Last week I had a “damnnnn I don’t know what to make for dinner” moment. Walking in the super market I saw tofu. Mmm, that was something I hadn’t had for a while! I did a quick google search on it on my phone and had enough ideas. I grabbed the tofu, walked home and started cooking. I combined the tofu with paprika, onion, rice, coconutmilk and peanutbutter and it was delicious. Super fast, easy, tasty and vegetarion. How did I make that?
Ingredients for two persones
375 g tofu
75-100 gr rice
1 red paprika
1 small onion
2 dining spoons kecap manis
4 dining spoons peanutbutter
2 tea spons freshly grated ginger
handfull of sesame seeds
Boil water for the rice and prepare the rice according to the instructions on the package. In the meantime cut the tofu, paprika and onion into pieces that are all about the same size. Bake the onions until they are glazy (about one minute) and add the tofu. Let them bake for about three minutes. Now you can add the paprika and two spoons of kecap manis and two teaspoons of grated ginger. Once everything is almost done add the four spoons of peanutbutter. Stir everything really well. Now you can add the coconutmilk. How much you need depends on the peanutbutter. You do not want it to be a sauce but it also doesn’t need to be sticky and dry. Divide the rice over two plates, just as the tofu mix. Put some sesame seeds on top of it and you are ready. Eet smakelijk!
