Christmas dinner part III: Tenderloin with broccolini and potato fans

Lactosevrij kerstdiner

The thirth course of our lactose free Christmas dinner was the maincourse. We decided to make tenderloin with peppersauce, sweet broccolini, mushrooms and potato fans. To make it lactose free we used vegetable butter instead of normal butter for the peppersauce (in the Netherlands they have it at Albert Heijn) and soy based whipped cream for the sauce as well. Here are the recipes for the main course of our four course Christmas dinner.

Lactosevrij kerstdiner

Tenderloin – Ingredients for 8-9 persons
1kg of tenderloin (we had 8 125gr pieces, this is faster to prepare than one or two big pieces)
Fresh pepper and salt
Baking butter (use liquid butter on vegetable base to keep it lactose free!)
Meat thermometer

Put some butter in the pan. Once the butter is almost melted at your tenderloin. Let is bake on both sides for a few minutes, then put the lid on the pan and put the heat down to low-medium heat. Turn the meat from time to time on it’s other side. Use a meat thermometer to see when it’s done.

Peppersauce – Ingredients for 8-9 persons
25gr of vegetable based butter
250gr soupvegetables
2 cloves of garlic, cut in halfs
380ml meat fond
250ml soy whipped cream
1 tablespoon fresh black pepper (or more, add to taste)

Melt the butter in a pan and bake the soupvegetables and garlic for about three minutes on low heat. Add the fond and make it almost cook. Wait 20 minutes, so the vegetables can give taste to the fond. Now drain everything and save the liquid. You don’t need the vegetables anymore. Let the fond cook for about 10 minutes (it should get a little bit thicker). Add the soy whipped cream and let it cook for about 15 minutes on medium-high heat. Add the pepper and taste it. If you want, add more pepper to taste. Also add some salt to taste and let it warm up for about two more minutes.

Sweet broccolini’s with almonds – Ingredients for 8-9 persons
800gr broccolini’s
110gr almonds
8 tablespoons of honey

Cook the broccolini’s for about three minutes with some salt. In the meantime roast the almonds on medium-heat until they get some color. Drain the broccolini, add it to a bowl and sprinkle the honey and almonds over it.

Lactose vrij kerstdiner

Potato fans – Ingredients for 9 persons
18 crumbly potatoes
Fresh pepper and salt
Rosemary
Extra vierge olive oil

Wash the potatoes and make little cuts in them. But don’t go all the way through them! Pre-heat your oven to 220 degrees celcius and put the potatoes on some baking paper on an oven plate. Sprinkle a good amount of extra vierge olive oil over them, so they won’t dry out and season them with fresh salt and pepper. Add some fresh rosemary on top of them and let them bake until they are done. Depending on your oven this will take 45 – 90 minutes. Once you put them on your plate they will open up like little fans.

Mushrooms with onions – Ingredients for 8-9 persons
500gr mushrooms
2 big onions
Baking butter (use liquid butter on vegetable base to keep it lactose free!)

Cut the onions into half rings and bake them until they are glazy. In the meantime you can cut the mushrooms into slices and add them once the onions are glazy. After a few minutes put the heat down to medium heat and let it bake until the onions and mushrooms are almost the same color.
