Stuffed eggplant

I love eggplant, that’s not a big secret. I also love coriander but eat it far too little. This week I bought some fresh coriander, so I had to make something with it. I wanted to go for a simple dish: rice, minced meat and some kind of yoghurtdressing. But in my search for a recipe I stumbled upon the recipe for filled eggplant with coriander yoghurt dressing. Perfect! I also had aubergine at home, but had to change the stuffing a bit because I didn’t have all the ingredients. And believe me, this was really really good!

Stuffed eggplant

Ingredients for 2 persons

A pretty big aubergine
75gr couscous
10 cherry tomatoes
Half an onion
200ml vegetable broth
Handfull of raisins
4 tablespoons yoghurt
A big hand of fresh coriander
1 garlic glove
Lemon juice
Pepper
Olive oil
Cinnamon
Ginger(powder)

Pre-heat your oven to 200 degrees Celsius.Leaving the stem on, cut the aubergine in half lengthways and score the flesh deeply with a sharp knife in a criss-cross fashion. Put them in a baking dish. Sprinkle with olive oil gently and add fresh pepper. Bake in the oven for about 40 minutes, until the flesh is tender. In the meantime you bring the broth to a boil and pour this over the couscous. Mix very well, cover it up and after about 10 minutes the couscous has absorbed all of the broth. Cut the onion in small pieces and mix with the couscous. Cut the tomatoes in fours and mix them in as well. Add a tablespoon of cinnamon and a handfull of raisins and give it another stir.

Once the eggplant is done you can scoop out the flesh, carefully so the skin keeps intact. Mix the flesh with the couscous and put it back in the eggplant. This needs to go back in the oven for about 10 minutes. Now it’s time to make the dressing. Put four tablespoons of yoghurt and one-and-a-half of lemon juice in a bowl and mix them together. Cut up your garlic really fine and add it to the mix. Add half a tablespoon of gingerpowder,cut the coriander finely and add as well. Put your eggplant on a plate, add some dressing on top and enjoy!

How to make stuffed eggplant lactose free: Instead of normal yoghurt I used Minus L (in the Netherlands you can buy it at Jumbo). Their products d not contain lactose.
