Stuffed round courgette

Stuffed courgette

After I made stuffed eggplant last week it was time to stuff another favorite veggie of mine: courgette! I bought some round courgettes and these are perfect to stuff. They taste the same as your regular courgette, the only difference is the shape. The stuffing was very simple but delicious! So here is my recipe for stuffed courgette.

Stuffed courgette

Ingredients for 2 persons

2 round courgettes
125gr sliced bacon
1 big tomato
2 spring onions
2 eggs
2 cloves of garlic
Italian herbs
Chili flakes

Pre-heat your oven to 180 degrees Celsius. Wash the round courgettes, cut the top of and get the flesh out with a spoon. Cut it into small pieces and put it in a bowl. Cut the tomato and spring onions in small slices and add them with the bacon to the bowl. Press two garliccloves about the bowl, add two tablespoons of Italian Herbs (a mix of oregano, thyme, basil, pepper, bay leaf, sage leaf and parsley). Add a little bit of chiliflakes, the two eggs and mix everything together. Put the two empty courgettes in a baking dish and fill them with the mixture. Put everything that doesn’t fit inside the courgettes in the baking dish as well. Put the dish in the oven for about 30-40 minutes and you are done. Your house will smell delicious, and believe me it tastes even better! <em>Eet smakelijk</em>.

How to make stuffed courgette lactose free: This recipe is lactose free. If you want to add cheese make sure you use lactose free cheese.

    lijkt me lekker! dit wil ik wel eens proberen, ik zou alleen de spekjes eruit halen of vervangen – ben niet zo van de spekjes!
