Christmas Dinner Part II: Jamie’s Pumpkin Soup

The second course of our lactose free Christmas dinner was Jamie Oliver’s homemade pumpkin soup. And let me tell you BEST soup ever! The soup was the first thing we made, because it is a very easy course to make in advance. While cooking it it smelled delicious and it also tasted very very good! Wow. This is something I am definitely going to make more times! But only when I have a boy around, because believe me peeling and cutting that pumpkin was..intense! Luckily we had a boy around who good do it for us because I don’t think my friend and I could have do it! Here is the recipe for Jamie Oliver’s delicious and amazing pumpkin soup.

Chirstmas dinner pupkin soup

Ingredients for 6-8 persons
50gr smoked bacon, cut into pieces
2 red onions, cut into pieces
1 strand of celery, cut into pieces
2 cloves of garlic, finely cut
a few strand of rosemary, nails finely cut
1kg pumpkin, cut into pieces
1/4 teaspoon of chiliflakes
1/4 teaspoon paprikapowder
1,5 litres of vegetablebroth
Peper and salt
Olive oil (normal for baking and extra vierge)
Hand blender

Heat up a big stockpot on middle heat. In the meantime you can cut all the ingredients up. Put some olive oil in the pot and out the bacon, onion, celdery, garlic and rosemary in it. Put the lid on the pot and stir everything from time to time. After five minutes it is time to add the pumpkin, the chiliflakes and paprikapowder. Put the lid back on the pan, stir it from time to time and let it bake for about 25 minutes or until the pumpkin is soft. Add the broth and let it slowly cook for about 10 minutes. Blend everything with a hand blender until it is a smooth soup. Add peper and salt to taste. Put the soup in bowls and decorate it with some extra vierge olive oil and rosemary. Eet smakelijk

    Yummie! Lekker! Ik heb laatst de pompoen soep van Nigella gemaakt! Was ook erg lekker, maar dat pompoen snijden is echt een hels karwei inderdaad!
