Potatoes are on of my least favorite things to eat. Or at least, the simple cooked potatoes. Boring! How I do like my potatoes? Baked, with a lot of herbs or honey, in a good stew from time to time, puffed with salt and some butter or from the oven. I used to just throw my potatoes in an oven dish with some herbs and oil and put them in the oven. But over the time I’ve learned that it is important to pre-cook them in some way, because this way they will get done much faster and they will get done all the way. Last week I combined some red potatoes with balsamic vinegar and it was delicious. Here is my recipe for potato parts from the oven, or aardappels uit de oven as you would say in Dutch.
Ingredients for 1-2 persons
8 (red) medium potatoes
1 red onion
4-6 gloves of garlic
Fresh pepper and salt
Cut the potatoes in quarters and put them in an oven dish. Put them in the microwave for about 5 minutes. This way you will pre-cook them and they will be done faster. Of course you can also cook them in water, but this will take much longer. Pre-heat your oven to 180 degrees celsius and sprinkle the potatoes with a good amount of oilive oil and balsamic vinegar. Season with fresh pepper and salt to taste. Cut the onion into eights and put the pieces in between the potato pieces. Add four to six whole gloves of garlic and put it in the oven. Add some rosemary to the potatoes after fifteen minutes (I didn’t have fresh rosemary so I used dried) and put the potatoes back for another five minutes. Now taste one to see if they are done. When they are done put them on a plate. If you like you can also eat the onion (after twenty minutes in the oven it’s really sweet) and the garlic (I put two on my plate and threw the rest away).
You can combine this with almost anything, I chose to grill some pumpkin and a simple hamburger. Eet smakelijk!
How to make this lactose-free: This recipe is completely lactose free. To keep it this way make sure you don’t pair the potatoes with anything containing cream, milk or cheese.
