Trying out new recipes is something I really enjoy. And when a recipe turns out to be super quick and delicious I get a big smile on my face. For busy days I’m always on the hunt for new, quick and delicious recipes and this pineapple rice with shrimps is definitely one to add to my list for those busy days when you want to bring something different to the table but don’t have much time. Rice, shrimps, pineapple and coriander: a perfect mix of different flavors if you ask me. Here is the recipe for pineapple rice with shrimps.
Ingredients for 2 persons
200-250gr (cocktail) shrimps
425gr pineapple (small pieces)
Pepper and salt
Prepare the rice according to the instructions on the package. Add the juice of half a lime and a tablespoon, a tablespoon of oystersauce and some salt to the water of the rice. In the mean time heat up some oil in a pan or wok and add the shrimps with one tablespoon of oystersauce, the juice of the other half of the lime, one tablespoon of ginger (fresh or powder) and some fresh salt and pepper. After a few minutes you can add the pineapple. Cut about 8 stems fine and add them the pineapple-shrimp mix, together with the rice. If you want to you can add some more oystersauce and ore limejuice, according to your own taste. Eet smakelijk!
