It has to be clear bu now that soup is one of my favorite dishes during the colder months. Especially when I eat alone I love to make a delicious (and easy) homemade soup. And I think it also ain’t no secret that courgette (or zuchinni) is one of my favorite vegetables. So it only was a matter of time until I would share a recipe for courgette soup. Here I am sharing my recipe for a fast, easy and delicious lactosefree zuchinni soup.
Ingredients Zuchinni soup
As a starter for 4 persons or a main course for 2 persons
1000ml chicken broth (or vegetable broth)
1 big onion
80gr (natural) butter
Pepper and salt
Melt the butter in a pan and bake the onion until it is glazy. Cut the zuchinni in small (but not too small) pieces. Once the onion is glazy you can add the zuchinni and bake it for three minutes on medium-high heat. Don’t forget to stir regularly. Add 800ml of the borth and boil for about ten minutes. Take the pan of the heat and blend the soup with a hand blender. You can make the soup as smooth as you like. Put the soup back on the stove and add the remaining broth, little by little until the soup has the consistency of your desire. Taste the soup and add pepper and salt to taste. Don’t forget you will garnish it with bacon, which contains salt as well. Give the soup one last stir and put it in some bowls. Garnish with the bacon and enjoy. Eet smakelijk
If you don’t have a hand blender you can also use a regular blender, just make sure it can handle the heat!
How do you make this soup lactosefree? If you use natural (lactosefree) butter the soup will be lactosefree.
