Mushroom Spaghetti Recipe

I am crazy about mushrooms. But I also like to have meat or fish (tuna!) in my pasta. So the first time I made this recipe I was a bit skeptical. But it turned out to be great and I wasn’t missing the meat or the fish. So here is my recipe for (vegetarian) mushroom spaghetti.

Mushroom Spaghetti Recipe

Ingredients for 3 – 4 persons
500 gr spaghetti
400 gr mushrooms
1 big onion
2 garlic cloves
200 ml sour cream
75 ml applejuice (or dry white wine)
75 gr rocket lettuce
Pepper and salt
Olive oil

Prepare the spaghetti according to the instructions on the package. Cut the mushrooms and onions in pieces. Heat up some olive oil in a large frying pan and bake the onion. Once the onion is “shining” you can add the mushrooms. Bake for about 5 minutes. Cut the garlic in small pieces and add this to the pan. Let it bake for about 1 minute. Now you can add the sour cream and apple juice. Give everything a good stir and leave it on low heat. Make sure it doesn’t start to boil! Season to taste with pepper and salt. If the mixture is hot you can turn of the heat and add the spaghetti. Finally you can add the rocket lettuce. Give it one last stir and it’s ready to serve! Eet smakelijk!

How to make this recipe lactose free: Replace the sour cream for lactosefree or soy yoghurt.
