Mushroom Risotto recipe

I never made risotto until last week. The boyfriend and I are both a big fan of mushrooms so that would be the perfect base for a risotto made by me. And hell yeah, it was. Combined with a little bit of chicken and garden peas is was the perfect meal for the two of us. My boyfriend eats a lot, so I would say this normally is for three persons.

Mushroom Risotto recipe

Ingredients for 3 persons
400gr risotto rice
1 litre of forest mushroom broth
1 little onion
1 clove of garlic
150 – 200gr chicken filet
250gr mushrooms
100gr garden peas
grated cheese
4 tablespoons of olive oil
Pepper and salt

Make the broth ready and cut the onion and garlic in small pieces as well as the chicken and mushrooms. Heat up four tablespoons of olive oil in a big pan and fry the onion garlic until the onion is shiny. In the mean time you can prepapre the peas. I put the in a bowl with some water and steamed them in the microwave so they were warm already. Add the chicken. When the chicken is almost done you can put the heat on medium heat and add the risotto. Keep stirring until the risotto rice is shiny. At the first bit of broth (I used a soup spoon) and keep strirring until the risotto absorbed all of the broth. At the next spoon of broth, keep stirring until it’s all absorbed, add the next spoon etc. until the risotto is ready (this takes about 20 minutes). Make sure you don’t add too much broth at once because this won’t do anything good to your risotto. You may not even need the whole litre, depending on the other ingredients. Ten minutes after the first time you added the broth you can add the mushrooms and five minutes later you can add the peas. Once the risotto is ready (it has to be al dente) put the heat off, season it with pepper and salt to taste, add some cheese and let the cheese melt. Give everything one last stir and your risotto is ready!
