What to do with a Mango that you really need to eat but you really don’t want to cut it up and eat it? Well, as a real kitchen princess I made a mango chutney of it! I never had it before but I heard a lot of good things about it so I decided to give it a try. I looked up some different recipes, combined them to my own liking and voila: a delicious mango chutney! My favorite way to eat it? On bread with a slice of broiled chickenbreast.
Ingredients for about 300-400 ml
– 1 mango (about 300-400gr)
– 1 mediumsized onion
– 1 clove of garlic
– 150 ml white or nature vinegar
– 150 gr sugar
– 50 gr raisins
– Half a teaspoon ginger
– Half a teaspoon chilipowder
– One tablespoon lemonjuice
– A jar (about 400ml) that you cleaned really well
Cut the onion in small pieces and the clove of garlic in really fine pieces. Remove the skin from the mango and cut it into pieces. Save the heart because you will need it. Put a pan with a thick soil on mediumlow heat and add the mango pieces, mango heart, onions, garlic and vinegar. Let it slowly cook for about 30 minutes and stir from time to time. After 30 minutes you can remove the heart of the mango and add the raisins, sugar and ginger. Let is cook for another 10 minutes. Now taste it and at the chilipowder, lemonjuice and salt to taste. Let is cook for another 10 minutes until it is a little bit thicker. If you think the pieces in it are to big you can mash it a little pit with a fork or potato stamper. Put it in a cleaned jar (I used an old marmelade jar) and close the jar. You can keep it in the refrigerator for about 1-2 months.
