Through the Dutch Diabetes Federation I ordered a cookbook for people with diabetes. The book contains 200 dishes, from all over the world that are appropriate for people with diabetes. I never had the feeling that I couldn’t eat the things I want, because of my diabetes. But there are a lot of people who think they can’t eat a lot of things because they have diabetes. This book proves that is so not true. Once i’ve tried a few more recipes I will write more about the book. But for now a recipe. I’ve changed it a bit (the didn’t have all the ingredients at my supermarket). I also though it was a lot (because I made it for 2 instead of 4). But even the edited version was a lot for 2 persons! If you make some rice to go with it, this recipe will definitely be enough for 3-4 persons. It is super easy, you don’t have to touch a pan! En besides easy it’s also healthy and delicious.
Ingredients for 2 person or 3-4 persons (with rice)
4 mackerel fillets of 100gr
1 big tomato
2 spoons of olive oil
The vegetable sauce
1 big carrot (cut in slices)
1 big onion (cut into rings)
1 stalk of celery (cut in slices)
3 cloves of garlic
2 twigs of fresh time
1 stalk of fresh parsley
400gr diced tomatoes from a can
400gr Chickpeas from a can
100ml dry white wine
Pre-heat your oven at 180 degrees celcius. Put all the ingredients for the sauce in a big bakinh dish. Before you add the garlic crush it with some salt. Put some heat resistent oven foil on the dish and put it in the oven. After 20 minutes you can take it out, but leave the oven on. Put the fillets on top of the sauce. Put two slices of tomato on each fillet. Sprinkle some olive oil, pepper and parsley over the tomatoes. Put it back in the oven for 15 minutes and your meal is ready!
