Lactosevrij bananenbrood met noten en rozijnen

Bananabread seems to be very ‘hip’ lately. Recipes fort his delicious bread/cake pop up everywhere. It wasn’t my intention at first to share my bananabread recipe, there are already so many recipes out there. But last week I decided to put nuts and raisins in my standard recipe and it was super delicious! I posted a photo of it on Instragram and got some very enthousiastic reactions so I decided it was time to share my recipe. I have used this recipe for the last two years and it is a winner everytime.

Lactosevrij bananenbrood met noten en rozijnen

Ingredients for bananabread

Three (ripe) bananas
2 splitted eggs
250gr (wheat) flower
1 teaspoon baking powder
½ teaspoon salt
120gr natural butter
120gr brown sugar
Big hand raisins
Big hand of mixed (unsalted) nuts

Pre-heat your oven to 180 degrees Celsius and get your baking tin ready. I put a baking sheet in it, so it is super easy to get your bread out once it is ready. Make sure the butter is at room temperature and mix it with the butter, using your hands. Mash the bananas with a fork, the riper they are the easier it is (and the sweeter they are) and mix them with the egg yolks. Beat the eggwhites with a mixer until they are stiff. Once they are stiff you add the banana-eggyolkmixture and mix it for a very short time. With a spatula you mix the butter-sugarmixture into it. Don’t use a mixer anymore, because your eggwhites won’t like it. Now you can add the flower, baking powder and salt and mix it with a spatula again. Once everything is mixed you can add the mixed nuts (mine had hazelnuts, walnuts and almonds in it) and raisins. Mix them through the batter and add the batter to your baking tin. Put the bread in the oven for 40-60 minutes. How long it takes depends on your oven and how ripe your bananas were. After 40 minutes you put a toothpick in the thickest part of the bread, if it comes out clean your bananabread is ready. If not put it back for another ten minutes and try again. Delicious as a snack but also very filling so perfect for lunch. Eet smakelijk!

How to make lactosefree bananabread: if you use natural butter this bread is lactosefree. Make sure to check te ingredients of the butter!
