Lactose free strawberry pie

Last Saturday I visited my dad and little sister. Once my sister knew I was coming over she asked if we could bake something. Well, of course we could! In the train to Amsterdam I started looking for recipes, because I wanted to make something I could eat as well. I ended up creating my own recipe. Together with my little sister I made this strawberry pie. The great thing is that you can change up the flavors pretty easy by using other fruits or chocolate instead of strawberries. And it is a supereasy pie to make. And delicious, we enjoyed it with about seven persons and everybody loved it.

Ingredients for 12 persons
4 Eggs
160gr Sugar
1 Sachet vanilla sugar
175gr self-raising baking flour
Strawberry marmelade
150gr powdered sugar
400gr strawberries
A 24cm springform pan
Baking paper
Baking spray

Pre-heat your oven to 160 degrees Celsius. Put some baking paper on the bottom of your spring form, this way you are sure that the pie won’t stick to the bottom. Spray the whole form with baking spray. Mix the eggs with the vanilla sugar and sugar. Mix a little pinch of salt with the baking flour and sift it above the egg-vanilla sugar mix. Fold it lightly. If you want your pie to be more airy you should seperate the eggs, mix the egg white and fold it into the egg yolk-vanilla sugar mix. Put your mix into the spring form and put it into the oven for about 30 to 40 minutes. Put a wooden pick into the middle of the pie after 30 minutes, if it comes out dry your pie is ready. If not, bake it for another 10 minutes. Let the pie get cold.

While the pie is cooling down you can cut the strawberries into slices and make the frosting. Sift 150gr of powdered sugar and add a little bit of lemon juice to it. Mix it until you have a smooth, thick substance. If it’s too thick add some more lemon juice, if it’s to watery you can add some more powdered sugar. Once the pie is cold you can slice it horizontally into two pieces. Put a good amount of marmelade on the bottom piece and put the top back on. Put the frosting on the top and on the sides and cover it with strawberries. Once the frosting isn’t fluid anymore your pie is ready. Eet smakelijk!
