Before I give you the recipe for this goatcheese salad with walnuts I would like to tell a little story about my first experiences with walnuts. When I was little my grandparents used to have two big walnut trees in the garden. After a while the trees grew really big and they would have lots and lots of walnuts every year. I spent hours searching for walnuts inbetween the bushes as a kid. And of course eating the ones I just found. When my granda died the tree disappeared after a few years because it was too much work to keep up with for my grandma. But luckily for me, you can get walnuts everywhere nowadays. But of course the ones from the super market are not so good as the ones I had as a little kid (and way more expensive). Finding them yourself makes them taste so much better, lol. Walnuts are one of my favorite ingredients to put in a salad. I’m also a sucker for goat cheese and this recipe combines both of them.
Ingredients for two persons
75 gram field lettuce
6 round slices of (soft) goatcheese
250 gram of bacon slices
100 gram walnuts
100-150 gram spaghetti (I used whole grain)
Honey of your choice (I used flower honey)
Prepare the spaghetti according to instructions on the package. In the mean time you can wash the lettuce and bake the bacon slices until they are crispy. When the spaghetti is done rinse it off with cold water (this will prevent your spaghetti from getting sticky and if it is to hot your lettuce will get very slacky). Put half of the spaghetti on a plate and place half of the lettuce on top of it. Now put your goatcheese slices on a plate and put it in the microwave for about 10-30 seconds (so it gets a little bit soft, but is still round and not melted. I usally do 10 seconds, check it, another 10 seconds if needed etc.). Now divide half of your bacon on top of the salad and do the same with the walnuts. When your goatcheese is ready put three slices on top of it. Now you can put some honey on it, just as much as you want (not too much because then your salad will get way to sweet). Do the same for the other plate and you are done. Eet smakelijk!
