En cocotte: meatloaf with tomato

For my birthday I got four oven pans, also known as cocottes. In these little pans you can make many different things, in the oven. Each pan is for one person and it makes your plate look extra special. One of the first things I made in them was meatloaf. And both me and my boyfriend really enjoyed it, so here is the recipe.

En cocotte: gehaktbrood met tomaat

Ingredients meatloaf en cocotte

For 4 pans
500gr minced meat
1 beaten egg
1tsp ground cumin
3 cloves of garlic, squeezed
8 slices (big) tomato
1 grilled paprika
Pepper and salt

Pre-heat your oven to 200 degrees Celsius. Mix the minced with with the egg, cumin, garlic cloves and pepper and salt to taste in a bowl. Grease the pans andd put half of the meat mixture in them. Add one slice of tomato to each pan and add the rest of the meat mixture. Add another tomato slice on top and put them in the oven for 25-30 minutes. Garnish the pans with some grilled paprika and enjoy. Eet smakelijk!

I served this meatloaf with baked rice with carrots and pea. A great combination
