Last week I made a delicous salad to go with our biological chicken from the market. It was more than enough for two persones and very tasty. Here is how I made this courgette and walnut salad.
Ingredients for 2-3 persons
250gr small tomatoes
1 clove of garlic
fresh sea salt
Start by washing your vegetables and cutting the courgette in really thin and long slices. I used a cheese slicer for it. Cut the tomatoes in half and mix them with the courgette, one table spoon of olive oil en some fresh salt and pepper. Mash the garlic and mix that with two table spoons of lemon juice and five table spoons of olive oil. Add some fresh pepper and salt to taste. Put it in the same bowl as your salad, add the walnuts and mix. Tadaa, that’s it!
I ate my salad with chicken but you can combine it with whatever you want to. I think it will also taste great with some rice and minced meat.
