Usually my breakfast is easy and fast. Nine out of ten times my breakfast will contain of soy yohurt with muesli or banana. Or a mashed banana with some almond milk, I heat it up for a minute and then add coco. Yumm. And sometimes I will have a (rice)cracker with something on it. But that’s about it in the morning. I don’t take the time to make a special breakfast and most days I’m not that hungry in the morny. But when I do have the time, like today, because my exam doesn’t start until 18.00 hours, I like to make banana-egg pancakes. I guess most of you know what they are, but if you don’t: mash a banana, mix it with two eggs and bake pancakes.
Yesterday I did a bit spring cleaning and I also checked all my cabinets. It tunred out I had a lot of cocoa powder so this morning I decided to mix some of that with my banana-egg mixture. That way I made some delicious chocolat banana-egg pancakes. The recipe is super easy and you only need a few ingredients.
Ingredients chocolat banana-egg panckaes
1 ripe banana
1 tablespoon (raw) cocoa powder
Optional: cinnamon and raspberries
Mash the banana in a bowl (the riper the easier this will be) and add the eggs. Combine until you have a smooth mixture. Add the cocoa powder and mix very well, make sure there are no lumps. In a pan (on medium heat) you heat up some oil. Add the mixture and bake until the top get’s a bit stiff. You can now turn your pancake. It will take a few minutes for the top to get stiff, make sure your heat isn’t to high otherwise you will have a burned side! I made three little pancakes out of this mixture, but you can also make one big pancake if you like. Sprinkle some cinnamon and raspberries on top of your pancakes and you are ready. Eet smakelijk!
