Last week I cooked a four course pre Christmas dinner together with my friends. Almost everything was homemade and the four courses were completely lactose free. We started our dinner with an amuse which was a different take on a ceasar salad. The recipe is based on one of Jamie Oliver’s recipes from the Christmas Allerhande. Here is our recipe for the first course of our four course lactose free Christmas dinner: the amuses.
Ingredients for 20 pieces
2 pieces of baby romaine lettuce
1 can of tuna in oil (160gr)
125gr cherry tomatoes
160gr smoked chicken fillet
4 tablespoons mayonnaise
Pepper and salt
Select twenty leafs of the lettuce, wash them and put them on a big plate as little bowls. Put the tuna with the oil in a bowl and add the mayonnaise. Mix it with some pepper and salt to taste. Cut the tomatoes in half and cut the chicken fillet in small pieces (brunoise). Add some of the tuna mix to each leaf and put some chicken and tomaties on top of it.
That’s all! Because this recipe doesn’t need much preparation you can make it right before serving it. Eet smakelijk!
