Black bean quinoa salade

Quinoa salad

One of the things I’ve been eating a lot lately is quinoa. You can use it instead of rice but I think it is also nice as a salad! Cook it, mix it with some veggies and herbs and you have yourself a delicious filling salad. This is one of my favorite quinoa salads (along with a quinoa caprese salad. The same ingredients as a caprese salad but then mixed in a bowl with some quinoa). Here is my recipe for black bean quinoa salad.

Quinoa salad

Ingedrients for 2 persons
100gr quinoa
250gr mushrooms
400gr black beans
Fresh pepper and salt
Olive oil

Prepare the quinoa accoring to the instructions on the package. Cut the mushrooms in slices and bake them. Drain the black beans and wash them, you don’t want all the juice in your salad. When the quinoa is done add it to a bowl, add your beans,mushrooms and some fresh salt and pepper. Give it a good stir and add some olive oil en rosemary.

The great thing about this recipe is that you can easily add some extra ingredients. It tastes also great with some extra sweetness, such as corn or with coriander (I originally wanted to use that but I ran out of it so I used rosemary and some more pepper for this salad). Eet smakelijk!

      Het smaakt een beetje…jah ik kan het niet zo goed uitleggen eigenlijk. Het is heel anders dan rijst meer couscous, maar dan wat graniger en notiger ofzo. Haha dat klinkt vaag. Gewoon een keer proberen 🙂
