I started this salad with a layer of mixed lettuce on the bottom, but you can use whatever kind of lettuce you like. After that I added a layer of yellow paprika, a sliced carrot en a handfull of tomatoes in quarters. On top I added two spring onions and a big hand of pinenuts. I did not use a dressing because the tomatoes contain lots of juice and I kind of like the combination of tomatoes, spring onion and sweet paprika.
For me this was a perfect lunch. If you have a very long day I would suggest to add something like quinoa or pasta. Do you guys have tips for delicious lunches on the go?
